A pékek szerint volt tradíciója a hagyományos és a biokenyérnek is csak sajnos mára már elfelejtettük. A biokenyér lelke az alapanyagban van. Búzából, rozsból, tönkölyből és némi kis tritikálékból készíthetők a tiszta kenyerek.




Az újraéledő biokenyér elkészítése a következő: kövek között a hagyományos ősi technológiával megőrlik a gabonát, így benne maradnak a gabonában azok a lényeges dolgok, amelyek az egészségünket szolgálják. Tehát benne van a hántrész, benne van a csíra és a csírában a vitaminokon kívül az az őserő, az az energia, aminek köszönhetően a mag kifejlődik. Régen, nagyanyáink idejében nem voltak olyan őrlések és szitálások, hogy szét tudták volna választani a gabonának ezen részeit. A kelesztést érett tésztából kivett kis kovásszal végzik és ez után sütik a biokenyeret.
Mivel a biokenyér mindenféle adalék nélkül készül, lényeges a jó minőségű gabona. Ezért csodálatos dolog a tönkölybúza, ami egy ősi fajta, amiből süthetünk kenyereket. Fontos, hogy a szermaradványok és kemikáliák elkerülése végett csak biogazdaságokból, tehát vegyszermentes gazdaságokból kerüljenek ki a gabonák, amiből teljes őrlésű vagyis barna kenyeret lehet sütni.
A század gabonája a tönköly lesz. Különleges ez a búzafajta, mert a magokat egy-egy levélköteg, ún. pelyvalevél védi, de olyannyira, hogy amikor Csernobil után mérték, miben mennyi sugárzás maradt, ebben a gabonában nem volt semmi, mert a pelyvalevél attól is megvédte. Ez egy csodálatos védelmet ad a magnak, aminek az átlagosnál magasabb a fehérjéje, mások a rezgésszámai.

Szilvi kérdezte, hogy milyen "élesztőt" használok?

A hagyományos kenyérben az élesztő inkább csak tésztalazító szerepet játszik (bár némi élesztést is csinál, lásd Schirilla Vegetáriánus könyvét...), mint ahogyan a szódabikarbóna is.
A régi kovászos kenyereket a liszttel (tésztával) kovászoltak. Találtam egy keleti kenyérreceptet, amely azt írja, hogy őröljük meg a magokat, keverjük össze vízzel, másnapig kovászolódik ~melegebb helyen, azután süthető. Így remek kis "lepénykenyereket", zsömléket csináltam, búzából is, rozsból is.

Találtam egy biobolti polcon olyan élesztőt, amely csak búzából volt. Agyaltam, hogy vajon a kovászt szárították meg, és őrölték le?
Csíralisztről is olvastam valahol...egyszer kipróbáltam, hogy a őrölt szárított búzacsírát kevertem össze a búza liszjével, majd vízzel tésztává gyúrtam, és kenyérré sütöttem, a legalsó fokozaton (gázsütőben). Alig fél óra alatt elkészült, max kétujjnyi vastag kenyérke, amely belül nem hagyományos, hanem sokkal inkább málészerű, de mégis összeáll. Négy-öt szeletet is tudok belőle vágni, erre megy az avokádó, paprika, csalán, majorANNA , ... őrlemény, sárgarépa vagy cékla rágcsa hozzá (téli menü). Magában is ízletes a kenyér!

Mi más lehet igazán élesztő hatású, mint az ÉLET MAG(a), a csíráztatott magocska? Igaz, hogy a hőkezelés még így is olyan magas, hogy számottevő veszteség van, de talán még mindig űbereli a kereskedelem kenyereit. És persze sütés után revitalizálom...

Kipróbáltam, hogy radiátoron szárítottam meg, rozsból és csírájából ezt a receptet. Nekem ez így nem nagyon jött be, de próbálkozok búzával is.

Doug Graham doki azt mondja: a búza, rozs, árpa, zab inkább a lovaknak való (jogos, nem?), embernek a rizs, köles, hajdina (a keleti népek is alátámasztják ezt) való és az ami magok (amarant, quinoa, kukorica), ... További erősítő még a lisztérzékenység léte is, amely ezen magokra nem érvényes, szemben a búzáékra...
